How do I update ROOT version from 6.28/02 to 6.28/06 ?
Do I just delete the root folder and then download + install the new one ?

You can see all installation instructions at Installing ROOT - ROOT.
For your question, I would say you can download and uncompress the more recent binaries at Releases - ROOT , you shouldn’t need to install anything.

Wouldn’t I have two versions of root then ?
Depending on where you uncompressed the previous version, where you decompress the new one etc. you might have different versions of ROOT on your system and then use the thisroot.sh script to source the right one at the right time. Or more simply, you just remove the previous version after you download the new one.
